Mango Tango Chicken Serves 4 A mango is a beta-carotene and vitamin C powerhouse! This recipe is easy enough for a weeknight. The key is to chop and measure all the ingredients first.

Ingredients: 3 Tablespoons flour ¼ teaspoon salt ¼ teaspoon pepper 1 pound boneless chicken breast 1 Tablespoon minced fresh ginger 1 large garlic clove, minced 1 green onion diced fine ½ cup organic or low sodium chicken broth ½ cup fresh orange juice ½ Tablespoon brown sugar ¾ tsp. cornstarch 1 mango cut into ½ inch dice 2 Tablespoons lime juice Dash of cayenne pepper (optional) ¼ cup mint or cilantro chopped fine Directions: 1.
In a medium bowl, combine flour, salt and pepper and set aside. 2. Rinse the chicken and pat dry with a paper towel.
